Malai Kou Recipe (Malay Kuih)

I have successfully made 'Malai Kou' today (03/01/2008)!!
This is the recipe for 'Malai Kou'

Ingredient:
  • Wheat Flour (320g)
  • Sugar (400g) (200g cook & 200g mix with egg)
  • Majerin (250g)
  • Water (250ml)
  • Evaporated Milk (1 can)
  • Eggs (3pcs)
  • Bikarbonate Soda (2 tablespoon)



Brown melted sugar + majerin + water mixture (step 1 & 2)

Beat egg + sugar (Step 4 & 5)

soft peak foam egg mixture

Bikarbonate Soda + Wheat flour (Step 6)

Sieve (Wheat flour + Bikarbonate Soda)


Sieve and steam this mixture (Step 11)

'Malai Kuo' is ready to be served

Steps:
  1. Cook and continuosly stir 200g of sugar until it melts and turns into brown.
  2. Immediate add 250ml of water and 250g of majerin into the brown melted sugar and stir the mixture using spoon and turn the stove off immmediatedly. This is to prevent the sugar from being over cooked.
  3. Leave the mixture to cold.
  4. Add 3 pcs of eggs (yolk + white) and 200g of sugar into a huge container.
  5. Beat the mixture (egg + sugar) with electric mixer until it turns soft peak foam.
  6. Seive 320 of wheat flour and 2 tablespoon of bikarbonate soda and mix them together.
  7. Add 1 can of evaporated milk into the soft peak foam egg mixture (step 5).
  8. Add seived wheat flour and bikarbonate soda (step 6) into the soft peak foam egg mixture(step 5).
  9. Add majerin and brown melted sugar mixture (step 2) into the soft peak foam egg mixture (step 5).
  10. Blend all the mixture using electric mixer untill it completly mixed.
  11. Seive the mixture (step 10) into a container and steam it for 45 minutes.
  12. Let it cold and Malai Kuo is ready to serve now.
It's that easy.......

  3. Hey, I've never tried on other type of flour other than wheat flour.. wat flour are you using? Wanna try ur malaikou... yummy yummy
